Kitchen Sink Spring Root Vegetable SaladGF

Everything but the kitchen sink in this spring root vegetable salad! It's a flavorful vegan and gluten-free kitchen sink salad made with leftover vegetables that would otherwise get thrown away!

Ingredients

  • 1-2 cups arugula leaves
  • ¼ cup asparagus, chopped (raw or cooked)
  • 1 small red potato, roasted and diced
  • ½ cup broccoli or broccoli florets, chopped
  • ¼ cup roasted red beet fries
  • ¼ cup carrots, grated or ribbons
  • 1-2 Tablespoons almonds, chopped
  • 1½ cups of unsalted cashews, soaked for 1 hour or overnight
  • 3 Tablespoons nutritional yeast
  • 1 Tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon Himalayan salt (or sea salt)
  • ½ teaspoon cumin
  • Filtered water
