Triple Citrus Cupcakes

Hello friends!

It may have snowed over 5 inches here in NJ, but in my head, March means Spring, and Spring means plenty of sunshine and fresh flavors!

I know living in the Northeast means I should “be okay” with the idea of a snowstorm in March, but one never truly gets used to the winters up here. You sort of just, deal with them.

You deal because the snow is gorgeous around the winter holidays, and you deal because everywhere south of NJ means even hotter and more humid summers.

Humidity and I do not mix. So I guess I’ll put up with this last (hear that Mother Nature? I said LAST) snowstorm because I know that spring is on its way.


  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup vegetable oil
  • 1 cup granulated sugar
  • orange zest from 2 oranges
  • 2 eggs
  • 2 tsp vanilla extract
  • ¼ cup orange juice
  • ¾ cup milk
  • 4 tbsp lemon curd
  • 1 cup butter, at room temp
  • 4 cups powdered sugar, sifted
  • juice and zest from 3 limes
