Chewy Chocolate Fudge Pops with Brownie Bites

Since meeting Brent, just over 12 years ago, our tasted have merged ever so slightly. I now eat more bread and carbs, cheese and fats, and he eats more fish and fiber. We used to order completely different meals off of the menu, but we now seem to gravitate towards the same thing. Together, we have developed new taste preferences. I'm still more fond of Thai food than he is, and he likes savory, smoky, BBQ flavors more than I, but generally speaking, we both love savory, cheesy, tangy, spicy, and sweet. 

Something else that's changed over time is Brent's love for chocolate. More often, he's the one filling the empty drawer in the kitchen full of chocolate. Occasionally he'll stop by Theo's after work and come home with $100 worth of chocolate and I'm thinking - you are insane. But then I end up eating most of it because unlike Brent, I have no self-control. 

I am a 100% chocolate girl. Chocolate ice cream, chocolate cake, chocolate cheesecake - I always choose chocolate when ordering dessert. So naturally, I gravitated towards a chocolate popsicle for the weeks #popsicleweek 

I have such fond memories of Fudgsicles from my childhood. They were always my favorite. Last summer I bought a box, thinking that they were going to be as magical as I remembered, but to be honest, they tasted a little weird. I can't explain it. Artificial maybe. Anyways, I've been off of Fudgsicles ever since. This gave me the idea to try and make a homemade version of my own, but with some cut-up, brownies mix in for chewiness. 

I can't even begin to explain how amazing they turned out. Honestly, I didn't have high hopes. I thought that I was going to need to add some sort of cornstarch or thickener to get that chewy texture, but theses popsicles really turned out so freaking good. They're so soft and chewy and rich and creamy, and really easy to make.

  • 4 oz semi-sweet chocolate chips
  • 3/4 cup heavy cream
  • 1/2 cup whole milk
  • 1 tbsp Dutch cocoa powder, sifted
  • 1/2 - 1 cup brownies, crumbled
